Pasta alla Toranese is a tasty Calabrian dish of pasta with Tropea onions and lardo (not lard). This recipe comes from the town of Torano Castello in Cosenza Province, Calabria. It is a super simple dish with only 3 main ingredients; Italian lardo, Tropea onions and pecorino cheese. So full of flavour and easy to make!

Tropea may not spring to mind when considering the go to coastal towns in Italy, to those in the know, including our Italy experts, the seaside town is referred to as ‘The Pearl of the Tyrrhenian Sea’ or ‘The Jewel of Calabria.’ In addition to its impressive scenery, crystal blue waters, natural balconies, colourful buildings and verdant groves, there are numerous lively trattorias and piazzas in its centro storico - Old Town. Behind you the medieval town contains everything you might expect; nobles' palaces, churches and numerous alleyways, most leading to a balcony and another spectacular view. If you prefer, replace the lemon juice with two tablespoons of white wine vinegar and you’ll achieve the same sweet and sour contrast in the onion jam. We’ve shared a few personal recommendations for eating out in Tropea, but certainly we didn’t cover every restaurant the town has to offer! I’ll be honest — It wasn’t love at first sight for me in Tropea, despite its obvious stunning beauty. As I walked down the main drag, it felt like Italy’s other beach resorts — stores selling swimwear, not-great bars with far-too-bright gelato, lots of cheap souvenirs made in China. These famous red onions are grown in an area which stretches in both directions along the coast from Tropea. His Roman clients go mad for these bulbs: crunchy, exceptionally sweet and delicate. Most importantly, they don’t make you cry as much as ordinary onions when you slice them.Travel insurance will help you in your hour of need if you come down with appendicitis in Tropea, or trip and break an ankle while climbing down those stairs, and if your flights get canceled, you can get accommodation and new flights paid for. The fertile soil, containing sand from the Tyrrhenian beaches, is a natural booster. B&B Sunset Tropea offers fabulous views and is located right in the old town with the most beautiful beach in Tropea on your doorstep. If Sunset Tropea is fully booked - it often is - then another good B&B is the Costa degli Dei. You might be tempted to leave out the spices but although the flavor is subtle, they do add a lovely complexity to this jam so I would recommend using them.
