Although it is made from single column and double pot distilled rum, just like other Mount Gay rums, Black Barrel uses a higher proportion of double pot distillates. Mount Gay Black barrel is a small batch rum which has been made from double distilled pot and column still rums and then aged in heavily charred bourbon barrels. Mount Gay Black Barrel was actually featured in one of my older reviews (1 year and a half ago), also a “vs” between XO and BB, so it will be interesting to see how my palate evolved since. Crafted from a blend of intense and aromatic rums, distilled in traditional copper pot and column stills, matured between 3 to 7 years in American whiskey casks, and finished for 6 months in deeply charred Bourbon casks.

From mid palate towards the end it becomes more spicy and woody with bold black pepper notes, some ground coffee and a touch of smoke – I’d say this is a layer added by the charred barrel.
