The blend for the Special cuvee is an ideal version of the classic Champagne blend, using the different grapes of a given year from a variety of crus, with the addition of older, reserve wines.The blend of 60% Pinot Noir, 25% Chardonnay and 15% Pinot Meunier grapes gives a beautiful aromatic complexity of ripe fruit, hints of roasted apples, apple compote and peaches. This Champagne is a blend of wines coming from various harvests, including reserve wines aged in magnums for 5 to 15 years. Champagne Bollinger was established in 1829 by Jacques Bollinger and to this day is still family-owned. The most significant period of its history was from 1941 to 1977, the tenure of Madame“Lilly” Bollinger, who expanded production significantly and was ahead of her time in travelling the world to promote the brand. Around this time Bollinger also acquired some of its precious pinot noir vineyards, using the grapes in the production of its two rosés. To the eye: Bronze tones combined with the intense depth of a great red wine. To the nose: The nobility of red berries: hints of red currant, cherry and wild strawberry. During her many visits abroad her natural grace and charm worked wonders. Cheerful and witty, Madame Bollinger was nonetheless a formidable strategist and businesswoman. Bollinger Champagne is available at The Champagne Company and began with Joseph Bollinger in 1822 who took up employment with Müller-Ruinart, but later joined forces with Paul Renaudin and the Comte de Villermont to form Renaudin, Bollinger Co in 1829. The Bollinger vineyard estate has 152 hectares of vineyards in the heart of the Champagne area in the grand crus and premiers crus with a style derived from Pinot Noir grapes; grown in the very best grand crus of Ay, Bouzy and Verzenay. Bollinger recently bought Ayala Champagne in 2005. Bollinger is famous for its consistency of style, structure and aromatic complexity. This is a complex and elegant Champagne with a wonderful combination of velvety bubbles and flavours of pear, brioche, spice and fresh walnuts. Our bins hold 18-24 bottles of wine or Champagne or 2-3 cases of lager when filled with ice and water. Drinks will be chilled in 30-45 minutes and will be kept cold for several hours, especially if kept in the shade.
