In a small bowl combine the coconut and the food colouring, stirring it until all the coconut is coloured evenly. mix well to get a rather thin batter than seems pretty runny - do not add any more flour, as it is not necessary and it will change the consistency of the sponges in a bowl, add the sugar and eggs, and use a hand mixer to beat them together well until you get a runny mixture that has a pale yellow colour These mini egg cupcakes are popular at Easter and were inspired by my Easter Creme Egg Chocolate Swiss Roll and my Microwave Creme Egg Fudge. Mini eggs are one of my favorite Easter candies and one of the best things about Easter! I can't seem to get enough of them or make enough recipes with them. These easy Mini Egg Cupcakes are a fun and festive Easter treat that looks just like an Easter egg hunt in cupcake form. Add the eggs one at a time, beating well at medium-high speed between additions. Scrape the sides and bottom of the mixing bowl, and mix for 30 seconds more. The batter will be thin.As soon as the grocery store starts displaying the Easter candy, I bust out my shorts. Well, maybe a few weeks later but I know that spring has sprung….at least in the retail stores. I never have a shortage of candy around my house this time of year either so I’m always looking for fun treats to share with my neighbors and my son’s preschool class. For the topping we crush the Mini Eggs slightly by placing them in a bag and hitting them with a rolling pin. You can just use whole Mini Eggs if you want but I love the look that the smashed chocolate eggs give to the cake.
